We love simple roasted vegetable recipes from Roasted Cauliflower to Roasted Carrots, Baked Asparagus, and of course crispy Roasted Potatoes. Roasted veggies make for an easy dinner side dish, just toss them together with some seasonings and the oven will do the rest.
If you love a good hands-free side dish, this oven-roasted Broccoli might become your new favorite way to enjoy broccoli.
Easy Roasted Broccoli
Broccoli has always been a popular healthy side dish that pairs well with Pan-Seared Steak, Chicken Breast Recipes, and just about any dinner. Roasting the broccoli florets in the oven gives it slight crispiness out the outside and keeps them tender and juicy. It also looks great with irresistible golden edges.
You will love how versatile this recipe is. Our favorite topping here is parmesan but you can tweak the seasonings or add-ins to your personal preferences with great results (see variations and ideas below).
Ingredients
The ingredients for roasted broccoli and so minimal and you most likely already have them all on hand!
- Broccoli – Fresh broccoli is best for this recipe.
- Oil – Though we used olive oil for the recipe, you can substitute it for your favorite oil on hand. Avocado oil or even vegetable oil will work just fine.
- Seasoning – We kept the seasoning to just the classic salt and pepper.
- Garlic – Though we love freshly minced garlic with broccoli, you can easily substitute for garlic powder or opt out of the garlic completely. If you don’t want the garlic crispy, add it halfway through cooking instead of at the beginning.
Pro Tip: You can also roast the stem of the broccoli head, but be sure to use a vegetable peeler to remove the tough layer on the broccoli stem, otherwise, it can be tough to chew. Once the stem is peeled, cut it into bite-sized pieces and toss it in with the rest of the broccoli.
How to Roast Broccoli
The oven-baked broccoli is best when enjoyed right out of the oven so plan on having your entree ready to be served.
- Prep – Preheat the oven and line a rimmed baking sheet with parchment paper.
- Cut broccoli – Cut the broccoli into medium florets. Be sure to cut them into uniform pieces for even cooking.
- Season- Add the broccoli to the baking sheet, drizzle with oil, add the garlic, salt, pepper and toss to coat.
- Cook- Roast the broccoli until the edges are lightly browned and desired doneness.
How Long Do You Roast Broccoli?
The roasting time for the broccoli florets will depend on two factors, the size of your florets and the temperature of the oven. Here are some standard times for medium florets:
- At 350°F: 30 – 35 minutes.
- At 375°F: 25 – 30 minutes.
- At 400°F: 18 – 22 minutes.
- At 425°F: 14 – 18 minutes.
Roasted Broccoli Variations
Though this classic roasted broccoli recipe is absolutely delicious and doesn’t really need anything else, here are some ideas in case you want to try some add-ins:
- Almond – Add sliced almonds to either the last 5 minutes of baking to taste the almonds, or just add them when serving.
- Lemon – Squeeze some fresh lemon juice over the roasted broccoli just before serving.
- Cheese – Add freshly shredded or grated parmesan cheese before serving.
- Bacon – Add bite-sized bacon pieces to the broccoli about 10 minutes before the time is up for bacon broccoli.
- Dressing- Whip up a fresh batch of Avocado Ranch to serve as a dipping sauce for the broccoli.
- Heat – If you like some heat in your food, add some red pepper flakes to broccoli when roasting.
- Balsamic – Drizzle with our Balsamic Glaze before serving.
Make-Ahead
You’ll want to enjoy the roasted broccoli warm for the best results but leftovers also keep well.
- Prep-Ahead: You can pre-chop and measure out the seasonings and oil ahead of time. Just before baking, toss it all together and put it in the oven.
- Refrigerate: Once the broccoli has cooled to room temperature, transfer to an airtight container and refrigerate for 2-3 days.
- Freeze: Transfer cooked and cooled broccoli to a freezer-safe bag or container for up to 3 months.

My son loves this receipe. He can not get enough. I have to add the fresh garlic halfway through as I am not a fan of the full roasted garlic flavor.
Hi Serena! I’m so glad he’s loving the recipe!
Does anyone know how much garlic powder? I don’t have garlic so I have to use powder and I cannot figure out how much. Thank you!
Hi Shirly, if you have pure garlic powder then it’s pretty easy to substitute it for fresh cloves. One clove of garlic equals about 1/8th of a teaspoon of garlic powder – not much, so it’s worth starting small and tasting as you go!
Looks delicious but only 4 grams is 154 calories????? That means 1 ounce of cooked broccoli is 1078 calories!?
HI Donna, there are 4 servings in this recipe (we didn’t measure it in grams) and each serving is 154 calories.
I love making roasted broccoli. My problem is the smell. It stinks in my whole house and my husband hates it. Any advice on how to get rid of that smell?
Hi Melissa! We love it too.
I haven’t tested any methods myself but I have heard that doing a vinegar steam can help neutralize the odor. It may be worth trying. Just look into it online, you should be able to find more information on how to do this.
This is a very easy, flavorful way to make broccoli. My while family liked it.
I’m glad to hear, Hannah!
I am trying to learn how to cook at the age of 27 and this is one of the first things I’ve tried. It’s currently in the oven and my home is filled with the most delicious aroma. Thank you so much!!
You’re welcome! I’m so happy you enjoyed it, Connie!

Hi Cheryl! I’m so glad you loved the recipe. Thank you for sharing.
Hey! How long do you think should I do for frozen broccoli, or should I just steam it a bit then roast?
Hi Ashley! In my experience, frozen broccoli can cook faster than fresh, so you may need to watch it closely to not overcook it. You may try rinsing in warm water to pull apart any bunches that are frozen together. Hope you love the recipe.
Fantastic and easy side dish. I will be making this again and again. Thank you!
Thank you, I appreciate your good comments and feedback!
The instructions say to line the baking sheet with parchment paper but the pictures all show a baking sheet that was *not* lined. It was just the bare metal. That makes me wonder if the result will be the same and the broccoli will get the same charred result on parchment paper.
Hi Diane, it will still work well with or without parchment paper. Lining the baking sheet just makes it easier to cleanup.

I actually tossed the broccoli in a garlic infused oil (Trader Joe’s), salt/pepper. Forgot the Parmesan at the end —- will add next time for extra yumminess!
I intended to rate this 5 stars!
Not sure how it entered as 4. Is there any way to correct this?
Thank you!

Hello,
I used this recipe last night it was delicious. Was wondering if I could use frozen broccoli?
Hi Demi! I think that would be fine. In my experience, frozen broccoli can cook faster than fresh, so you may need to watch it closer to not overcook it. You may try rinsing in warm water to pull apart any bunches that are frozen together. Hope you love the recipe.
