Mom’s Meatball Soup Recipe

I kept meaning to get Mom’s recipe for this wonderful and easy meatball soup. She’s been making it for years. Because I love the meatballs so much, we put lots of them in this soup (2 lbs!!). You could use 1 lb and adjust the seasoning accordingly, but why? WHY?!!

My Mama and I made this together in her kitchen. I love cooking with Mom. I always learn so much. Everyone loved this soup and there was less than half left after a few hours. I downed two bowls myself and my son loved it too. It’s a winner for sure!

Ingredients for Mom’s  Meatball Soup:

15 cups water
1 Tbsp salt
6-8 medium potatoes, cubed
3 medium carrots, thinly sliced
1/2 cup pasta (optional)
1/2 onion, finely diced
2 large sticks of celery, finely diced
3 Tbsp canola oil
1 large egg, lightly beaten (optional)
2 Tbsp Dill, fresh or frozen
Mrs. Dash
Freshly ground black pepper

Ingredients for the Meat Mix:

2 lbs ground pork
1 tsp Mrs. Dash original or Mrs. Dash garlic seasoning
1/2 tsp freshly ground black pepper
2 tsp salt
1 large egg
1/2 onion, finely diced

How to Make the Best Meatball Soup:

1. Add 15 cups water to a large soup pot over high heat. Add 1 Tbsp salt and all of your chopped potatoes to the soup pot.

2. Bring to a boil and cook 10 minutes. In the mean time, slice your carrots and toss them into the soup pot.

3. Add 1/2 cup of 1/2″ pieces of thin spaghetti to the soup pot or whatever pasta you wish. Pasta is optional, but I’ve always liked it when Mom added it to soups.

4. Chop your onion (1/2 goes into the meat mix and 1/2 goes into the soup in step 7).

5. Place ground pork into a large bowl (Store-bought ground pork works. I ground my own pork on the large grinder holes). Add 1/2 chopped onion, 1 tsp Mrs. Dash, 1/2 tsp fresh ground black pepper, 2 tsp salt, and 1 egg. Mix well.

6. Make meatballs by rolling them in your hands. They don’t have to be perfect, just round-ish. Toss them in your pot as you make them. Recruit a helper for meatballs to liven (and speed) things up. Cook for at least 10 minutes or until meatballs are cooked through and floating at the top.

7. Meanwhile, heat a non-stick skillet over medium/high heat. Add 3 Tbsp canola oil, finely diced celery and onion. I normally don’t like celery in soups, but sautéing enhances the soup’s flavor without being over-the-top celery flavored. Saute until soft and golden. Add it to the pot.

8. Add 1 beaten egg to the soup pot while stirring constantly so you don’t get clumps of egg. If you don’t like egg, you can omit it (the soup won’t miss it).

9. Add 2  Tbsp dill. Then add more Mrs. Dash and Pepper to taste (Mom added about 1/2 tsp dash and 1/4 tsp pepper at the end).

Soup Ingredients:

  • 15 cups water

Meat Mix Ingredients:

  • 2 lbs ground pork
  • 1 tsp Mrs. Dash

  • 1 large egg
  • 1/2 onion, finely diced

Instructions

  • Add 15 cups water to a large soup pot over high heat. Add 1 Tbsp salt and all of your chopped potatoes to the soup pot. Bring to a boil and cook 10 minutes.

    Would it be possible to use ground beef instead? And could I skip the celery, since I dislike the taste of it?

    Wonderful – I’ve made this several times, either ground beef or ground turkey meatballs, and olive oil instead of canola. Never with pasta. Try it with Yukon Gold or Yellow potatoes – they disintegrate and thicken the soup delightfully! The recipe also works as potato soup without the meatballs. Perhaps my ancestors from Berditchev, Ukraine prepared a soup like this?

    Favorite soup. Over the years, We’ve modified the recipe a bit to make it friendly for our diet. We removed the egg, potatoes and spaghetti for our diet restrictions- still tastes amazing! We also use grass fed beef instead of pork, still Fantastic!!

      Hello there! You can totally omit the egg and you won’t notice the difference. It’s just being added to thicken the soup and enhance the taste.

    The recipe, like so many of yours is truly fantastic. Reminds me of mama back in the 30’s when we’d cook together. She tought me to add egg to soup through a coarse strainer with a spoon while stirring the soup slowly and the egg with a spoon. Do that gave you long smooth strings of smooth strands of egg. We didn’t have any pork so we had to use beef with one whole egg. Added 4 cloves of garlic lightly fried in EVOO. Just before we were ready to eat I had mixed emotions about adding pasta. We had some left over home-made spaghetti. Last minute said why not. It was delicious and really complemented the delicious soup.Used Michael White’s recipe to make the pasta.(on Martha Stewart) Your recipes are totally fantastic. Much like mama’s. Looking forward to many more. Took pictures but don’t know how to upload them. Grampa Joe.
    PS. Not big on dill, left it out.

    kind of funny but I made an almost same soup yesterday ! soup is a good thing yet it seems as though the young adults of today are missing out on such a simple nutritious meal ,,Soups yes good old fashion soup. with Bone broth is a yes oh no time ?? make that Bone Broth in a slow cooker just keep freezing it ,and use it when you have enough ,,, Did your mom really use canola oil,,?? olive safflower corn so much better than a GMO weed base oil ..

      Hi Gala, Yes you could totally use beef meat instead. My mom has also used ground beef with mushrooms and it tasted great although the beef was a little bit dryer. I think the thigh I meat will be delicious if you chose chicken thighs.

      You could try some pork loin and chop it up finely with a sharp large bladed knife. We had the same thing happen and we substituted beef. Would not change it back. It came out fantastic. Tasty, flavorful and meatballs for everyone. Mama and I had meatball soup for the rest of the week and immensely enjoyed each and every meal. Fabulous recipe. But then again, all Natasha’s recipes are out of this world.

      I know I’m answering an old post, but I always use medium ground beef. To make the meatballs light and tender, along with all other ingredients, add 2-3 tbsp dry bread crumbs or finely crushed soda crackers + a couple tbsps of a liquid of your choosing, eg. milk, cream, wine, beer, broth. Combine well but don’t overwork the mixture.

      Hi Mirella, you can just use your favorite salt-free seasoning. The ingredients: onion, garlic, carrot, orange peel, tomato, lemon juice powder, citric acid, oil of lemon, spices (black pepper, parsley, celery seed, basil, bay, marjoram, oregano, savory, thyme, cayenne pepper, coriander, cumin, mustard, rosemary.

    This was super delicious ! Thank you for sharing the recipe. However I was only able to make half because I didn’t have a big enough pot for 15 cups of water .

    I used ground turkey since I don’t eat pork. Also I added fresh squeezed garlic to the soup at the End.

    Hi Natasha,
    Since I’m only cooking for two, I will be cutting this recipe in half. I still ended up buying 2 lbs of ground pork. Can I make these meatballs and freeze half? How much longer would I need to cook frozen meatballs, or would I thaw them first ? Thanks in advance!!

      Hi Julie, I have frozen meatballs for soup in the past but I do prefer to thaw before adding them to the soup otherwise adding frozen meat tends to make the broth murky.

      Hi Heather, sorry I didn’t specify – it should be about 10 minutes or until meatballs are cooked through. They will be cooked through by the time you are done prepping the vegetables and adding the remaining ingredients. I updated the recipe to specify.

    Absolutely wonderful soup! I made this on 26 July 2017. Easy, straight forward recipe, enjoyed not only by me, but the entire Thai family loved it, and they will be heating it up this morning as well! I did not make the Mrs. Dash Seasoning yet so I just seasoned with salt, pepper, spring onion, and the tops from the celery. This is will be a regular here at the house now.     Is there anything I can do to make the liquid more flavorful? I omitted the celery because I really don’t like celery but I feel like the liquid is just salted oily water. Like it’s missing flavor. Any suggestions what I can add? Maybe chicken stock?

      Hi Anna, did you use the amount and type of meat (pork) called for in the recipe? It should provide ample flavor to the soup without needing broth unless you substitute with a less flavorful meat. You can definitely replace some of the water with chicken broth, especially if you subbed for another kind of meat. I hope that helps! 🙂

    My mom made a soup with rice instead of pasta, and gently sauteed the balls before adding them to soup. It prevents the meat scum from forming. Easy to do by slicking the pan with oil and gently shaking it as the balls get golden. I will try to use the 2 tsp springloaded ice cream scoop to form the balls(I think it’s #70).

      Any all-purpose salt-free seasoning would work. Without knowing what you have available in your grocery stores, it’s difficult to recommend a specific product.

        So far I only found
        MasterFoods All Purpose Seasoning in Tesco eshop here, but the ingredients looks much different with mrs. dash. Probably I will need to try searching for others when I go grocery shopping..

        Also need to search for dill. hmm

        Oh! By the way, I tried your Borscht soup few days ago, without Dill. Taste nice! Thanks

    Thank you for this recipe. It was delicious! This is just like my granny made it, she also used to add celery to her soups!
    I used beef instead of pork and it tasted great. This was a little taste of childhood for me!

    Hey Natasha, this soup looks so good. However I would like to try it with chicken tigh meat instead of pork. Do u think it will stay together or will it fall apart?

      Yes you could totally use chicken thigh meat instead of pork. My mom has also used ground beef with mushrooms and it tasted great although the beef was a little bit dryer. I think the thigh I meat will be delicious.

    I just made this for my family. I have been trying to make a different soup every couple of days so I decided to try this on for variety. I have never made this soup before, or anything that called for meatballs really lol, but it was so easy! I followed the recipe almost exactly except I used chicken instead of pork and the meatballs were light and wonderful. I also omitted the egg because I forgot about it. One more addition was one Knorr chicken bouillon cube for flavor. My whole family was crazy about it, and my four year old said “mama you are the best cooker ever!”. Will definitely make it again. Thanks!!!

      The resource I use is CalorieCount.com. Once you set up a free account, you can paste in entire recipes and get calorie counts and nutritional information. I’m hoping to go through some of the old recipes and do that, but it would take me countless hours. Maybe when I go flex at work ;). Anyway, I hope you find that resource helpful! 🙂

    Hi Natasha-
    Just want to thank you for such an easy to follow recipes on your blog. Everything I’ve made so far turned out great, except when I decided to make this soup the second time using beef and mushrooms instead of pork as you mentioned in the comments below…anyway, so this time with beef the soup came out very oily. I tried to spoon out some oil from top but it is still really really oily. Do you know what went wrong here? Also after sautéing onions, celery and mushrooms I was very careful not to dump the oil from the pan into the pot.

        I just used regular ground beef I bought at Walmart. Also I usually use only olive oil for cooking/sautéing, but this time I used canola oil. So I’m not sure what caused the oiliness, but next time I guess I shouldn’t skimp out on good quality meat. Lesson learned :/

          I’d recommend using a lean ground beef. Ground beef can be quite a bit oilier depending on the % fat.

    This is almost like “Italian wedding soup”.Instead use chicken broth, omit the egg and dill…Lots of small meatballs, that I fry up or bake in the oven before dropping into the broth. Better flavor to meatballs.
    Use “orzso pasta” added the last 20 minutes…Too DIE for!
    Freezes well….

    I did not expect this soup to taste this good! I ran out of Mrs. Dash & my meatballs were half pork, half beef but it was soooooo good! My 11 month old couldn’t stop eating! Hubby, 9 year old and 4 year old made the meatballs very tiny. Oh, and we skipped the pasta because we gluten-free. Delish! Thank you.

    The soup was good, I added more seasonings to soup and meatballs. I tried putting egg in there but the soup kinda started to look like Chinese hot&sour so I didn’t do all of it.I dislike celery but did put it into the soup, it was pretty good. And as with all soups for me, I diced some fresh garlic into the soup before serving…also, I baked the meatballs as suggested in your comments and ill either bake or fry the meatballs with onion&celery from now on.     Hi, Natasha. You do so good job. I want to give you one tip for meat ball soup. I put meat balls into the oven and fry them there until golden color. It will give your soup better look and wonderful taste. Also you will get rid of extra fat and that bad meat liquids. My 9 children and husband noticed the difference right away:) Please correct my english, because I am old ukrainian lady:).Enjoy!

    How long do you cook the meatballs for? If you drop them after the potatoes have already been boiling for a while, won’t they overcook? Thanks!

      Add carrots and pasta then start mixing and molding your meatballs. I’ll go back and clarify. You don’t really wait during any of the steps. You just go from step to step. By the time you are ready to add meatballs, your potatoes have probably been in the pot about 15 min or so. Does that make sense?

    I made this with a few changes (cause I’m poor thanks to college XD)
    I used Chicken for the meatballs. And no celery, I don’t really like it cooked…
    Your recipes is AMAZINGG, I will be making a lot of these cause I live alone and I miss my mammas food (I am from Ukraine, but living somewhere else)

    Wow!!! I made this soup but made it little bit different, I didn’t had celery so i skipped that part, instead of pork i used beef and instead of pasta i used couscous.. Turned out soooo delicious.. Can’t wait for my husband to come home from work and make it for him.. I just ate two plates of this soup.. Thank you thank you thank you..

      My dill is just about ready to freeze. It’s fun to have a little herb garden. Last year, I planted it in a big pot/planter indoors and it worked well, but this year my hubby built a 7×2 raised garden bed just for my herbs 🙂

      Rinse and lay out to dry indoors or outdoors. When dry, discard the thicker stems and chop finely and put them in a clean sour cream tub or whatever you want to freeze it in. Pat down gently but don’t pack it in too tightly. Cover, label with the date and freeze. Now you have wonderful dill all year long!

      Lina, you can use any meat you like really. My mom made it the following day with beef meatballs and added sauteed mushrooms to the soup. It was so so good! Turkey and chicken might be healthier options and would work well also.

    This was sooo delicious! Just one thing, seems like with all soups that I make (other than borsch) there is just a lacking flavor, maybe it needs more mrs. dash, or salt? possibly some bouillon? what do you recommend?

      Do you make your other soups with meat? The meatballs add great flavor to this so I didn’t even have to add bouillon. But Mrs. Dash and a little bit of salt always helps and I do add more bouillon to taste too. Try adding Mrs Dash first, then bouillon (keep in mind most bouillon cubes have plenty of salt in them).

        That’s the main reason I dont like adding the bouillon cubes because of the sodium….but I normally boil the meat for about 45 mins then i take it out and add veggies…but I’ll try to add mrs dash first….I love your website! I need to laminate it and turn it into a cookbook!

      Hi! This soup sounds delicious. I usually make the meatballs with pork and beef 50/50, as we usually so here in Scandinavia. I think that most soups taste better if you don’t eat them at once. Try waiting until the next day, and the soup will taste so delicious. I was wondering about Mrs Dash, but that problem was already solved by Natasha.

          You can just use your favorite salt-free seasoning. The ingredients: onion, garlic, carrot, orange peel, tomato, lemon juice powder, citric acid, oil of lemon, spices (black pepper, parsley, celery seed, basil, bay, marjoram, oregano, savory, thyme, cayenne pepper, coriander, cumin, mustard, rosemary.

    Hi Natasha, I keep up with your website all the time.. and I really like this soup, one of my favs, I used to make it with beef all the time before. But recently I tried it with ground turkey and just used all the same seasonings and let me e tell you, it was delicious! You couldn’t even tell the difference and it made me feel good eating it because turkey is so much healthier.

      Yes definitely. It’s especially fun when there is a third set of tiny fingers. Three generations cooking together (one making more of a mess than cooking). No wonder the kitchen is the most important room in the house!
