Shrimp Avocado Salsa Recipe

A Skinny Shrimp & Avocado Salsa. This stuff is so addictive. Our favorite salsa! @NatashasKitchen

Things have gotten a little out of hand in our house over this salsa. We’re so obsessed with this and have probably made shrimp salsa a hundred times (I kid you not). Over time, we’ve been tweaking our original shrimp salsa to incorporate more veggies. The avocados take this shrimp avocado salsa way over the top! Between the Mr and I, we scarf down a 6-8 serving-sized bowl. Yeah…

You know the crazy cool part? There is no added salt in this recipe which means your tomatoes and cucumbers wont get squishy. There is also no oil or added fat, making this a skinny shrimp salsa. It’s zesty and delicous and you won’t miss the salt one bit! Serve it with hot sauce if you like a good kick to your salsa (we sure do!).

We’re participating in the OXO and NFI Shrimp Council’s shrimp showdown! Eastern Seafood Company sent us 5 lbs of Large shrimp and OXO provided all the fantastic tools for preparing them. We put both to good use! 🙂

It is important to check the source of your shrimp! The Eastern Fish Company sent us shrimp that is chemical-free and wild caught from the waters of Mexico! They source their shrimp in an environmentally friendly, sustainable way. Huge thank you for the gorgeous shrimp!

Shrimp Salsa Ingredients:

1 lb cooked shrimp (peeled/deveined & cooked)
Fresh Lime juice (from 3 medium limes)
2 avocados, diced
1/2 english cucumber or 1 regular cucumber, diced
3 medium tomatoes, diced
1 small onion, finely diced
1/2 bunch Cilantro, chopped
Tortilla chips and Tabasco or Tapatio hot sauce to serve

How to Make Shrimp Avocado Salsa:

1. Chop cooked shrimp and transfer to a large mixing bowl. Squeeze lime juice over shrimp, stir and let marinate while you chop the rest of your ingredients.

2. Dice cucumber and add to the bowl (don’t stir until all the ingredients are in). Dice tomatoes and add to the bowl, then add finely diced onion. Top with avocado and finally the chopped cilantro.

3. Stir everything to combine and serve. We love eating this with a boat load of hot sauce and tortilla chips.

There is no added salt in this recipe which means your tomatoes and cucumbers wont get squishy. There is also no oil or added fat, making this a skinny shrimp salsa. The lime and cilantro is where it's at in this recipe and you won't miss the salt one bit! Serve it with hot sauce if you like a good kick to your salsa (we sure do!).

Ingredients 

Servings: 6 -8
  • 1 lb cooked shrimp, peeled/deveined & cooked
  • Fresh Lime juice, from 3 medium limes
  • 2 avocados, diced
  • 1/2 english cucumber or 1 regular cucumber, diced
  • 3 medium tomatoes, diced
  • 1 small onion, finely diced
  • 1/2 bunch Cilantro, chopped

      Hi Lynda, you can make the entire batch a day ahead, cover and refrigerate and it will be completely delicious (just as good if not better, the next day!)

    So tasty! Didn’t think the cucumbers would taste so good with this mix! I like sodium so I added salt to this and I like jalapenos so I added that too and it was freaking awesome!! Will definitely make this again!!

    We LOVE this salsa!! I make it for lunch, dinners, and any party we might be having…. I have even made it as a dish to take to someone else’s party and everyone raved about it there!! It is my favourite way to have a light, fresh summer time meal as well… but now for mid-winter, I am going to have it for watching the football games this weekend as well…. can’t wait… YUM!

    Made this Shrimp Avocado Salsa today for Superbowl!!! It was a big hit!!!     Made this today as a trial run to serve at my girls game night. Althou has the potential for a great appetizer seemed a little flat tasting. Thinking a little salt may help.

      Hi Carol! I’m so happy you love it :). I don’t have nutritional information on most of my recipes due to time constraints. Also, I haven’t tried any sugar or flour substitutions in this recipe and without experimenting, I really can’t make any recommendations for that. I do use the caloriecount.com recipe analyzer on occasion to get nutritional info. You can sign up for a free account there. I hope that helps!

    I made this last night and i love it. I was wondering do you know the serving size portion? I use an app to calculate serving sizes to make sure my calorie intake is made daily.

      Hi Lina, I never measured it out exactly but I would say serving size portion is about 1/2 cup, maybe a little more. It serves 6 to 8 as an appetizer.

    Hi, when I was scrolling down thru your pictures of the veggies, I noticed that you were cutting the entire cilantro with scissors. Most recipes only call for the leaves, but you seem to be using the stems also. Is this correct?

    I can see why you’ve made it so many times. I’m working on beating your record. This is SO delicious! I don’t make it as salsa, though, but as my personal salad (smaller portion than original recipe) for lunch. I skip the tortillas and just eat it as salad. Yum yum!!

      I really haven’t tried it with parsley. I’m a major cilantro fan and so is my hubby so I don’t think I would test it anytime soon. That’s a tough question because I love how cilantro tastes in this and couldn’t imagine it without….

    This looks to be a wonderful recipe. Not a true ceviche, as the shrimp would be raw.

        Yes indoors. I live in Wisconsin. So they will be indoors till spring. The trees will get as big as the pot you put them in. It really is fun to watch them grow. I have mine in. South window for the winter. I also have a mini green house I bought on Amazon around 9 years ago. So that also helps. I think they are around $40? I can share the link if you’d like, back to the avocado trees. You just take your avocado pit. Point side up, insert a tooth pick on each side, this is to balance it in a cup of warm water covering the bottom in water. Did that make sense? There’s a few really good YouTube videos on this. Lol I’m also growing lemon and key lime trees. Some of those are getting real big! Oops lol! But they are really pretty. Btw. Key limes will really give fruit in about 2 to 4 years I heard! The others won’t give me fruit. That’s my guess. Avocado trees really need a warm climate. Sorry so long winded. Haha

    OMG, this was so good I can’t say enough, T hank you for sharing it. I had it for our salad with pork cutlets and baked potatoe. I just wanted the salad. Nothing else but you salsa.     Did you take tomatoes seeds out?
    Would it matter if I add onions completely mushed in a food processor? This is the only way I can it it uncooked.

      You might just skip the onions. Or if you do use them, use less and finely dice them then put them in right after the lime juice to tame their flavor down. You could do a tiny dice but I don’t know about pureeing them. Also, no need to seed the tomatoes 🙂 I hope that helps!
