Instant Pot Rice Recipe (Beef Plov)

This Instant Pot Rice recipe is a healthier, juicier and flavor packed rice pilaf called plov. It all comes together in 1 pot (the instant pot!) and you won’t believe how quick and easy this is.
Traditionally, beef plov is made with white rice, but we used a brown rice which was perfect for the instant pot because it doesn’t get mushy while the beef becomes melt-in-your mouth tender. Brown rice is also way healthier and your hungry people may not even realize it is brown rice. It works so well in this recipe!

Ingredients for Instant Pot Rice Beef Plov:
2 1/2 cups short grain brown rice (500 grams), rinsed and drained*
1 lb beef chuck or beef stew meat, cut into 3/4″ pieces
4 Tbsp olive oil
4 Tbsp butter
1 large onion, diced
3 large carrots, thickly julienned
3 cups (720 ml) very warm water
1 Tbsp salt (we used fine sea salt)
1/2 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground paprika
1/2 tsp ground coriander
1 whole head garlic, unpeeled, cut in half crosswise.
1 Tbsp freshly chopped parsley to garnish – optional
*TIPS FOR SUCCESS: We used organic short grain brown rice (I buy the “Lundberg” brand bag sold in Costco). DO NOT USE quick cooking rice, parboiled or white rice – these would all need modifications in timing and water. Use a standard measuring cup or a kitchen scale to measure the rice (not the measuring cup that comes with your instant pot).

Instant Pot Rice (Beef Plov)
Ingredients
- 2 1/2 cups short grain brown rice, 500 grams, rinsed and drained*
- 1 lb beef chuck or beef stew meat, cut into 3/4" pieces**
- 4 Tbsp olive oil
- 4 Tbsp unsalted butter
- 1 large onion, diced
- 3 large carrots, thickly julienned
- 3 cups 720 ml very warm water
- 1 Tbsp salt, we used fine sea salt
- 1/2 tsp black pepper
- 1/2 tsp ground cumin
- 1/2 tsp ground paprika
- 1/2 tsp ground coriander
- 1 whole head garlic, unpeeled, cut in half crosswise.
Instructions
- Rinse and drain rice and set aside. Set Instant pot to sauté on high heat (push sauté twice to switch to high heat) and add 4 Tbsp olive oil. Once oil is hot (but not smoking), add beef in a single layer and sauté until lightly browned (5 min), stirring occasionally.
- Add 4 Tbsp butter and chopped onion and stir 3 minutes until softened.
- Add julienned carrots along with all seasonings (1 Tbsp salt, 1/2 tsp pepper, 1/2 tsp cumin, 1/2 tsp paprika, 1/2 tsp coriander) and sauté 5 minutes until softened, stirring occasionally.
- Spread rice evenly over the top (do not stir). Push garlic halves cut-side-down, halfway into the rice. Pour very warm (or hot) water directly over the garlic cloves so you don't disturb the rice. Use the back of a wooden spoon to poke 5-7 holes through the rice to the bottom of the pot (this helps disburse flavor).
- Cover and cook on high pressure 30 min (I used the "Multigrain" setting). Let instant pot rest and naturally depressurize 10 min before switching to the venting position to release steam. Make sure the steam is fully released and the pressure valve has floated down before opening the pot.
- Remove garlic and set aside. Stir rice well to combine ingredients. We squeeze the garlic cloves back into the pot because they are melt-in-your mouth delicious.
Notes
**The meat will brown easier if you leave it at room temperature 30 minutes before starting to cook it.

I have made this several times now! I will say, do not substitute the type of rice that’s recommended per the recipe details above. It does not come out as good. Next time I’d love to try adding some different veggies. Any suggestions for that? I feel like it needs something green in it minus the green onions lol
Hi Jamie! I’m glad you loved the recipe! I haven’t tested any others but some that come to mind are mushrooms (because they don’t break down and get mushy). Broccoli sounds delicious too but it will get mushy. You may try chopping it small and mixing it in at the end if you want it to have crunch. Let us know if you experiment with any.
So easy and delicious. I made it many times and everyone love it. My son in law is a hunter so he ask me to use a deer meat instead of beef. Honestly I am not a fan of venison taste and smell but in this recipe you can barely tell the difference. Thank you.

Can I use diced lamb instead of beef?
I always find lamb more tender and tastier.

Hi Ilona, The serving size can be found at the beginning of the print-friendly recipe card (located at the bottom of the recipe post). The nutrition label shows counts “per serving.” This recipe serves 8 so it will be 1/8ths of the recipe. Hope that helps!
Learned this recipe from my Ukrainian daughter-in-law. I have made it at least 20 times as it is a family favorite. In fact I cooking this tonight as it makes for a quick, easy meal. I adjust to my taste by using beef stock instead of water and and adding a few bay leaves. The short grain brown rice comes out perfect with the instant pot set at 30 minutes. Hi Nichola, I used a 6 quart pot to make this recipe, I have tried it in an 8 quart but I imagine it will work as long as you meet the minimum liquid requirement of an 8 quart Instant Pot.

One of my readers doubled it and reported the following: “I did do 2 lb of beef and doubled all seasonings. I also did 5cups of rice and 5 cups of water. Fit to a T in the 6QT. I made this exactly according to the recipe, and it was wonderful—and tasted absolutely authentic. I lived in Kyrgyzstan in Central Asia for five years, where plov is the national dish. Aside from the use of beef instead of lamb, it is a very close match to the Central Asian version. A couple of notes:
—The first time I made this it failed. I set the Instant Pot to 30 minutes as suggested in the recipe, and the rice was seriously undercooked. But I noticed that the recipe also recommends using the “Multigrain” setting, and when I press that button it cooks for 43 minutes. That turned out to be just right.
—Several reviewers commented that it tasted “greasy.” Authentic plov does taste a little greasy to Western palates. Cut of meat with more fat are considered superior. If you prefer an “Americanized” version, just pour off some of the fat after the sautéed and add less butter. But keep in mind that the butter also contributes substantially to the taste.

I’ve loved this recipe for years. Most recently I marinated the stew meat overnight in some red wine and Worcestershire sauce and it turned out amazing. That’s the only alteration I’ve done.

Can I still make this recipe in my multi-cooker (it doesn’t have a sauté or plov setting), or should I stick with the stovetop method?
Hi Natalie! I have not tested this in a multi-cooker to advise. I assume it could work but you’d have to experiment with it.
Like a few others have noted, mine came out super greasy. I used a pack of stew meat that was slightly marbled and was close to 1.5 lbs. I didn’t drain off the excess fat. Big mistake! With the added butter, it ended up being super greasy. I also used long grain brown rice, but didn’t change the cook time, as some have advised. Also a mistake! The rice was slightly overcooked and mushy. Now that I’m aware of this, I’ll definitely give this recipe another shot. The flavor is wonderful and the meat was nice and tender. The garlic was a great touch. So, beware of make any changes to the recipe as written! DRAIN the meat and cook long grain rice for LESS time!

Hi Tanya! I haven’t tested this with long-grain brown rice so keep in mind if you are substituting- long grain requires a little less water and also may cook slightly faster than short grain.
My husband would like me to make this using ground beef. Will that work?
I think it could work with some adjustments, Kim. But you’d have to experiment with it.
This recipe was super easy and soooo GOOD! All I had was long grain brown rice so I followed another reviewers comment to double the recipe (because we love leftovers) and use a 1:1 ratio of rice to water (5 cups rice and 5 cups water), doubled seasonings, forgot to double the carrots so I added frozen peas mixed in after pressure cooking. I also just used baby carrots chopped into rounds. I used stew meat that was still very wet from being thawed in water so I made sure to drain all the water after I browned the meat so as not to mess with rice to water ratio. I wonder if I can make an “Asian” version of this by just changing the seasonings???

I finally got an instant pot and this was the first recipe I tried! My instant pot sauté option wasn’t consistent with the heat so my meat didn’t get a good sear. Overall I trusted the process and the result was delicious! Followed step by step. Next time I think i’ll sear the meat in a skillet. My picky husband and kids approved of this recipe! It’s delicious and oh so healthy! Will keep this on rotation for dinners at my house, thank you Natasha!

I made it vegan, 1.5x spices, saute onions & red pepper to start, add cooked beans for meat, and keep carrots chunky. i’ve made it as the recipe says and no matter what so far always delish – I love that it’s so easy, tasty. Thanks for the recipe(s)!

I make this fairly regularly with a few modifications as a one pot main dish. I reduce the rice to 2 cups, water to 2 2/3 cups, and oil and butter to 3 Tbsp each. Then I throw in some frozen peas after the pressure is released to help cool it quickly and add some color. It’s always well received by the family. Thanks for all the great recipes!

Hi Crystal! Thank you for following. I have not tested this to advise how to alter the recipe (cooking time, liquid, etc…) I always recommend trying a recipe the way it is written for the first time without making substitutions and then adjusting from there in the future.
Made it as per the recipe, but skipped the butter. Used a “Plov” spice mix from the Eastern European grocery store and about 1.25 lbs of meat (might even add a little more next time for a higher meat to rice ratio). Overall tasted great!

Hi Michele, I always recommend trying a recipe the way it is written for the first time without making substitutions. I think white rice will work but the timing will be different so you would have to do an experiment on that.

I am wanting to make this for dinner and went to Freddys to see if they have the short grain brown rice. The only short grain brown rice they had was sprouted. Is this the same? Would it change the cooking time if I used sprouted short grain brown rice?

Hi Natasha, where do you buy short grain brown rice? I was at Safeway today all they have is long grain. Or one that just says brown rice but it’s clearly also long grain. Would the plov come out mushy with long grain brown rice?
Hi Olga, our local grocery store carries it. But I’ve also seen it at Winco, Albertsons & Fred Meyer.
I could only find short white rice so I used that and cooked for 25 min using the pressure function instead of multigrain. Also I only had 2 cups of rice on hand so I used 2 cups of water. It wasn’t mushy, but did seem a tad wet but I think from the oil? It wasn’t soupy. It was good and my picky son had 3 servings. Next time I will try with broth instead of water to see if that boosts the flavor even more.
I usually make this recipe exactly how it’s written. I didn’t have any short grain rice on hand. I just made it with long grain. Had a fairly similar crunch to it like it would with the short grain rice. Great texture. Not mushy at all. Still delicious!

I made this with jasmine rice and reduced the time to 20, came out well but the meat was dry.

Hi, it could be the change in rice. I haven’t tested that through but it would probably be because the white rice absorbed more liquid and got overcooked before the meat could be tender. I always recommend trying a recipe the way it is written for the first time without making substitutions.
I was recently in Uzbekistan and was able to purchase Plov spice mix from the outdoor market. I searched high and low for an IP recipe that I thought would work and chose this one. I made some changes and used: 2lbs of chicken thighs, 3 cup Jasmine rice, and added two tablespoons of minced garlic. I used all the same spices listed but added two tablespoons of plov spice mix that I had too. I cooked it for 15minutes with 10min NR. It was a bit mushy for my tastes. So the second time I went with 10minutes with 10min NR and liked the texture much better.
It was a hit at home and at a family gathering! Everyone kept saying it felt “warm” and a great “comfort food”

Hi Olga, you can try other rice, but you will need to adjust to water and time. For example – Jasmine rice will get overcooked in this amount of time, you may try to make that less time, but I haven’t experimented to advise.

This is only the 2nd recipe I have made as a beginner user of an Instant Pot.
I made this for the first time last night. It may be that the recipe turned out exactly as it should– it looks nearly identical to your photos. But if this is how it should turn out, my tastes are a little different and I would be grateful for advice on how to modify the recipe without wrecking it:
1. Finished product seems distinctly greasy, as if I could reduce the quantity of butter and oil by half with improvement. Or would you suggest a smaller reduction?
2. The ratio of rice to everything else seems excessive– if I wanted to reduce the proportion of rice, how much should I reduce the quantity of water added (in the recipe as it stands now that’s 3 cups of water).
3. I know that pilaf is supposed to produce a soft and somewhat sticky rice– this seems too soft and too sticky, nearly mushy. If one wants to reduce this quality, does that call for a shorter time pressure cooking, or less water, or what would you suggest?

Hi George, Plov traditionally has a fair amount of oil (our recipe has less than many traditional recipes). Also, it can depend on how much fat content the meat has that you are using. You can try less water or rinsing the rice to avoid stickiness, but this recipe should make more sticky and creamy rice. I hope you love this recipe!
We actually use sirloin in this recipe which reduces the grease.
I never looked at the grain of rice before, but I noticed it calls for short grain brown rice. I went to the store this morning and couldn’t find anything packaged as short grain. I ended up getting Mahatma Brown Rice, which looks like it might be long rain (says Google). I am going to try this recipe tonight and see how it goes (we’re not super fussy). If you see this in time, do you recommend any changes to the recipe?

Loved this recipe same way I love every other recipe here! It turned out ok but my instant Pot timer never went off. It had On on multigrain for over 30 min and then I just gave up. Tried to see if changing multigrain to pressure cook would change anything and it showed “food burn”. I depressurized it and opened up. It was all cooked. Any tips on how to handle Instant Pot on that setting? What did I do wrong? Thank you!!!
Hi Marina, I’m not sure why the timer would not go off. Maybe it’s an issue with the instant pot itself? Make sure the venting knob is set to the sealing position so you don’t lose too much steam as it cooks and so it can come to pressure.
For those who say the rice is a bit under cooked…soak your brown rice for an hour in water, or longer before you start cooking…this usually works.

I made this a handful of times and the flavor of this is amazing. I only have one issue: seems like the rice never cooks all the way. It’s always a little hard. I am using the same brand and type of rice you use, and I followed your directions to the T. I checked multiple times, and I know I followed your directions exactly. What do you think it is? Do you have any tips for me, OTHER than what you already listed in your directions?
Hi Lilia, It’s hard to say without being there; when I try this, it cooks through perfectly! I’m curious if elevation or other factors play a role here. If that continues to happen, I recommend adding a minute or two of more pressure cook time. Also, make sure you set it on high.

I’ve been eating plov in restaurants in Brooklyn for over 10 years. I don’t even know how I discovered it. I love lamb and I love rice. Together is simply heaven. For the last few weeks I’ve been craving plov and since I’m a chef I decided to look up the exact recipe and procedure. I’ve watched every video and read every recipe on the Internet. Then I realized that I need a special pot which I don’t have so I started to research Dutch ovens when I came across your instant pot recipe. I read it and watched your video. I have a pressure cooker. How long should I cook it? It usually takes 10 mins to preheat to high pressure and then leave it 30 mins?
Hi Emma, the Instant Pot is essentially a pressure cooker with a couple of differences, and this should work great in a standard pressure cooker.

Recently bought an instant pot. Third recipe and only winner so far .
There is something about the mix of these spices , tender beef and rice that is so comforting and delicious.
I put the soft garlic in at the end . Only thing I think I may have screwed up on is that the rice was a bit more moist , almost like a risotto like texture . I’m not sure if the cool time should be increased . Still delicious and will cook again . Only complaint is my stomach hurts from eating too much of this 😆

I made this beef polov in my instant pot following your instructions, but unfortunately, I ran out of cumin and coriander and no fresh parsley, too. So I skipped them and didn’t expect much, but wowwww I was surprised because the dish came out very tasty! I can’t wait to make it again with complete ingredients. I made this original recipe several times and we love it so much but my kids aren’t a fan of brown rice, so this time I tried using Jasmine rice instead… it turned out amazing. My husband said it was the best plov he has ever had. I reduced the cook time to 20 min on high pressure and that’s the only adjustment I made. Beef was tender and so soft, rice was perfectly separated and had amazing texture and not mushy at all. The most perfect plov I’ve ever made 🙌🏻

Hi Marina, I think that should work! Honestly, the only thing you would have to change is the meat and possibly how long to braise it. We have a similar recipe for chicken that you can use as a guide here. I hope this helps.

Hi Nadia, I haven’t tested it that way but I think it would work with mushrooms. I think it’s worth experimenting.
Plov turned out good! However, I do not see the purpose of sautéing because food doesn’t brown in the instant pot; it’s crowded once you add onions and carrots and the sides of the pot are high, therefore it just simmers.
So next time I plan to just dump it in and push go and let it do the work.
That should work too, I just love sautéing it first. It’s a personal preference.
I made this for supper last night. Cut recipe in half because it is for 2 people. We both loved it! Had leftovers for breakfast this am with eggs and toast. Next time I will make more. Thank you.

You mention that this makes 8 servings. How big is each serving (either by volume or weight)? Our son was recently diagnosed with Type 1 diabetes and we’re still learning how to calculate his insulin doses. I appreciate that you included carbs in the nutrition info! We just want to adjust based on how much we actually give him. Thank you!
P.S., this is now one of our staple meals. Our whole family loves it! Even the dog, who gets the bits of fat trimmed from the beef. 😉

Hi Ruth, thanks for your feedback. Brown rice is a little chewier than white rice. I suggest checking to make sure it is the same kind of brown rice (different sized grains take varying amounts of water and cooking time), also be sure to keep all proportions the same and let it naturally depressurize for 10 minutes at the end of the cooking cycle which definitely helps for the rice to finish cooking, absorb some of the liquid and soften. I hope that helps!
I bought small grain brown rice and followed your instructions to the t so I will change the rice to Jasmine rice which I love.

On discovering I didn’t have enough brown rice when I was already in the middle of preparing this recipe, I had to pivot to accommodate white rice. What I did was follow the instructions up to the point of adding the rice. I put 1/2 c of water in and cooked under pressure for 15 minutes. Then I did a quick release and added the rice, garlic, and water and cooked under pressure for another 15 minutes. I did the 10 minute natural release to quick release. The meat was tender and the rice was not mushy.

It looks like it would ve been very tasty, but I got a burnt message on Instapot almost right away and couldn’t finish cooking per the recipe.
What would help adding an extra step of adding a bit of water to the meat, onion, carrots, and veggies, and scraping everything from the bottom before adding the rice.
Hi Catherine, it sounds like maybe the heat was on too high when you were searing the meat. I would suggest sauteeing on medium next time if you find that high heat is too hot and burning your meat. Also, make sure you are using enough oil. It will help to scrape the bottom of the pan when you add the butter and onion to scrape off any stuck-on bits. You can cook it on manual high pressure as well, but I used the “Multigrain” setting
We made this over the weekend and all our kids loved it. 7-18, all 4 of them. We could not find short grain due to shortages in stores near us so we went with long grain. If you go long grain like we did I recommend upping your time by 8-10 minutes and adding a 1/4-1/2 cup more liquid. Otherwise, it was lovely. Thank you Natasha.

The serving size can be found at the beginning of the print-friendly recipe card (located at the bottom of the recipe post). The nutrition label shows counts “per serving.” This recipe serves 8 so it will be 1/8ths of the recipe. Hope that helps!
I made this tonight for my family of 6 – we all loved it! My lightest eater had seconds which rarely happens! I did use a 3 lb. chuck roast instead of just 1 lb. to up the protein (I seared it in batches and added it all back in after the carrots were sautéed) and it worked perfectly, and we have enough leftovers for 3 of us tomorrow 🙂 I can’t wait to try experimenting with different versions of this!

Hi Julana, it doesn’t look like it anyone has tried this with cauliflower. If you experiment with that I would love to know how you like the recipe. Personally, I haven’t experimented with cauliflower in an Instant Pot.

Hi Rochelle, you can halve the entire recipe, but I haven’t tested that in a 6-quart Instant pot to be sure it’s safe. Make sure you are reaching the minimum required water level. If you happen to test that, please lt us know how you like it.
Natasha! Thank you for this amazing recipe! Quick question – when I sauté meat it gives a lot of water and then when I add onion – it is no longer “frying” but rather boiling in the water from meat. How do you deal with that?
Hi Yana, it sounds like you are overcrowding your pan. The meat should sear and not release water. Make sure your pan is hot enough before you add your meat. You can cook your meat in batched if using a smaller pan.

Plov to me was always such an intimidating dish to make. I remember as a child the enormous effort & process that it was. This recipe just turned everything upside down. I just finished cooking and eating this right now. The flavors are great and everything is cooked very well.
Unfortunately, if you are planning for this dish to be a main course, you will need to either double the beef or halve the rice.
As is, the finished product is like 80% rice which is a bit much for a main dish.
I will definitely make this again and probably do something like:
2 cups of rice and 2 lbs of beef.

This recipe turned out absolutely delicious, I used long grain brown rice for 35 minutes and its perfect, best plot I have ever made….. Meat is literally melting in your mouth, so soft… Thank You Natasha for wonderful recipe!

Hi Sulamita, the pressure cooker allows for faster cooking. I haven’t tried slowing this down to two hours to advise. If you experiment I would love to know how you like that.
if your instapot has a delay cook button on it I would experiment first while you are home and then if it works then you know that you can do it when you are not at home. Just a suggestion 🙂 Oh and when in doubt always refer back to your instruction book that came with your instapot. I hope that helpsa little. Happy instapotting 🙂

Made today and it came out great. My partner commented twice how much she liked it! Only change I made was using long grain brown rice instead of short because that was what I had on hand. Definitely going to be making this on a regular basis

We enjoyed this recipe very much. I used long grain brown rice because it’s what I had and it turned out just fine. The flavors were delicious. I served it as a main meal with a simple salad for four adults. It’s a keeper.

When I make this recipe it burns in mine pot why is that I go by the directions and it burn.
Hi Virginia, I have not had that experience but I’m more than happy to troubleshoot, are you using manual high pressure? Are you stirring the ingredients to get some liquid under the chicken?
Did the meal actually burn or did you get the burn notice flash on the IP? My IP seems to give me that notice every time I use the sauce function and the try to cook with pressure. Get the pressure down, use your cooking utensils and scrape the charred bits from the base of the IP. My IP is very fussy and does this every time but a little deglazing or scraping makes it work fine on the next attempt.
After you sauté anything in the Instant Pot, you have to make sure the bottom of the pot is completely deglazed and clean of any stuck-on bits. If you don’t, you’ll get the “burn notice” from your Instant Pot. That’s been my experience anyways
Would long train brown rice work? I can’t seem to find short grain. Thankyou
Hi Shannon, I haven’t tested with long grain brown rice, but they should be fairly close. You might cook on high pressure an extra minute with long grain brown rice.
Worked for me! I did 33 minutes on multigrain hogh pressure for long grain brown rice.
I must say theres a reason why theres so many good reviews on this recipe. Its genius. My kids love it. The only reason i am not a big fan is that we cant stop eating it! …..

well I used minced beef as that was all I had. Everything good except I found brown rice was a little too chewy. Maybe try white rice. Couldn’t pressure longer as carrots would have been mushy. Flavour was great!

He was so happy I could replicate it for him! I accidentally defrosted two lbs of meat instead of one. Do I need to change the recipe except for amount of spices to make this work? Hi Alivia, I wouldn’t necessarily double the spices since you are not doubling the rice. But you can add more to the meat to ensure it is not bland. If you experiment I would love to know how you like this recipe.
Update: I had already turned on the IP when you replied, so here’s how it went.
I used 2lbs of beef stew meat and had to use 2lbs short grain brown rice (all I had with quarantine). Still used 3 cups water and doubled spices. Same 30 min multigrain cook time. It was perfect!

Hi Anna, I haven’t really tested that yet to advise but others shared that they used lamb and it went well. If you would like to do an experiment, please share with us how it goes.

Hi Svitlana, it sounds like maybe the heat was on too high when you were searing the meat. I would suggest sauteeing on medium next time if you find that high heat is too hot and burning your meat. Also, make sure you are using enough oil. It will help to scrape the bottom of the pan when you add the butter and onion to scrape off any stuck-on bits. You can cook it on manual high pressure as well, but I used the “Multigrain” setting
Would I be able to use jasmine rice for this recipe?
Hi Lilia, Jasmine rice is not ideal for this recipe because it would overcook in the time it takes for the beef to become tender.
It would be great to have this recipe with farro instead of rice.

Oh my goodness, Natasha, thank you so much for this delicious recipe! I’ve never heard of Plov, what a treat. I was upset because we couldn’t find short grain brown rice nearby, so I finally just used the brown Jasmine rice we had. I used 2 cups of water and crossed my fingers. It turned out moist and creamy and the beef so soft. Thank you!

Hi Natasha I made this today and followed the recipe 99% (only change was vegan butter bc nursing and baby has dairy sensitivity) and the flavors were great but end result was a bit watery and rice seemed a tad undercooked. Any idea what I could have done wrong? Used same brand short grain brown rice and 3 cups water and 30 min on multigrain. Would love to try again but not sure what I did. Thoughts?
Hi Rena, it is most likely due to using a different type of rice than what is called for in the recipe. Short grain rice is more starchy and cooks up differently and more creamy than long grain. That is probably why it came out watery and didn’t absorb the liquid properly.
Thanks for the reply. I used short grain brown rice from the same brand that you mention for the recipient. I thought the recipe calls for short grain brown rice? I really loved the flavor and want to try again but not sure what to tweak.
Short grain is correct Rena. If it was different rice it may have resulted in that. I would try it again just be sure to watch the pot settings & measure everything correctly. Without being there it really is hard to say. Crossing my fingers it works out for you next time.
The best recipe I have made in a while. The hubby said make this part of the rotation!!! Love it turns out perfect and I used long grain rice.

Natasha, if I make this with long-grain white rice instead of brown… does anything change in the recipe? Water amount the same? My instant-pot has a button called Plov and it is for 20 mins. What time would you recommend if I used white rice? Thank you 🙂
Hi Lori, I haven’t had great results with white rice – the beef doesn’t get cooked well enough or the rice ends up over-cooked for the meat to be tender, this is why I used brown rice.

Can I use long grain brown rice for the plov
Hi Vicki, I haven’t tested this with long grain brown rice so keep in mind if you are substituting that long grain requires a little less water and also may cook slightly faster than short grain.
It all looks and sounds great, Natasha, but the taste is wrong. It doesn’t taste anything like the real Uzbek plov we make in Russia. You don’t need anything except for Turmeric and a tad bit of Coriander

Hi Allie, I haven’t doubled this personally, but I would keep the time the same if doubling. One of my readers doubled it and reported the following: “I did do 2 lb of beef and doubled all seasonings. I also did 5cups of rice and 5 cups of water. Fit to a T in the 6QT. Came out perfectly fine.” I hope that helps!
Can I use Jasmine rice for the instant pot plov?
Hi Jessica, Jasmine rice is not ideal for this recipe because it would over cook in the time it takes for the beef to become tender.
It is possible to use jasmine rice, but the process is a bit different. You would cook everything except the rice first. Once that is done add 2 cups or so of rice along with a cup or more of water or beef broth. This is dependent on how much rice you wish to add, and how much liquid is seen within the pot. Set pressure for 3 minutes, and allow to it to release pressure for 10 minutes. I have cooked it this way multiple times with great success. Thank you for the recipe!

Natasha, this is the way I make it everytime. I often double the recipe. If someone is uncertain about how much water or broth to add, they can use the following tried and true method. Make sure the that after adding the rice you then add enough water so that it comes up to your first knuckle. Thanks for such a great recipe!

Hi Inna, I haven’t tried this in a crockpot. I think it could work but I haven’t tested it to provide instructions on that. When not using an instant pot, we have a few other pilaf recipes that are staples in our house.

Unfortunately ours came out very sticky. We followed the recipe but the rice just glommed together. It still tasted pretty good but the texture was less than.
Hi Holly, did you use a different kind of rice and make sure to release pressure when indicated in the recipe. Rice can overcook quickly if you let it go for too long. It sounds like yours got overcooked.
